  • 50g orange blossom honey
  • 3 medium eggs
  • 158g freshly squeezed orange juice
  • 3 teaspoons fresh orange zest
  • 141g Premium Delicate Olive Oil

  • 195g (1½ cups) all-purpose flour
  • 300g (1½ cups) sugar
  • 2.3g (½ teaspoon) baking powder
  • 1.2g (¼ teaspoon) baking soda
  • 6g salt

Instructions

  1. Preheat your oven to 180°C (160°C fan).
  2. Grease and lightly flour a 26cm springform or cake pan.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. In a large bowl, whisk the eggs until smooth. Add the honey, orange juice, orange zest, and olive oil.
  5. Gradually add the dry ingredients in three additions while mixing until just combined.
  6. Pour the batter into the prepared pan.
  7. Bake for 45 to 60 minutes, or until a toothpick inserted into the centre comes out clean.
  8. For greater accuracy, the centre of the cake should reach approximately 98°C.
  9. Allow the cake to cool in the pan for 15 minutes before transferring to a cooling rack.
  10. Dust with powdered sugar before serving.
